Chicken Soup with Fresh Spices
- 1 union, (quartered)
- 1 tomato (quartered)
- 1 carrot (Cut into cubes)
- 1 Potato (cut into cubes)
- 2 bunch Chinese Celery
- 5 Chicken Thigh
- 1 inch ginger
- 3 cloves
- 1/4 nutmeg
- 1 cardamon pod
- 2 cm cinnamon sticks
- 1/4 tsp white pepper
- 1/2 tsp salt
- 1 bunch Coriander (for garnish)
- Heat cooking oil in a stockpot.
- Stir-fry chicken first for two mins then add onion, carrots, potatoes and close the lid.
- Cook for another 5 mins till slightly brown.
- Add 1 liter water into the stockpot
- Combine all the spices into a muslin bag or a tea-strainer and drop into the stockpot.
- Season with salt and pepper
- Let boil and add celery and tomato into the soup.
- Scoop up the floating stuff on the soup
- Simmer for 15 minutes or till the vegetables soften.
- Remove the spices
