IPA Honey Chipotle Slow Cooker Chicken
- 1 pound Boneless Skinless Chicken Breast
- 1/2 teaspoons Salt
- 1/4 teaspoons Black Pepper
- 3/4 cups Chicken Broth
- 8 ounces, fluid IPA Beer
- 1/2 cups Freshly Squeezed Orange Juice
- 4 whole Chipotles In Adobo Sauce (from A Can), Diced (more Or Less To Taste)
- 14 ounces, weight Canned Petite Diced Tomatoes, Liquid Drained
- 2 Tablespoons Worcestershire Sauce
- 2 Tablespoons Honey, More Or Less To Taste
- 1 Tablespoon Garlic Powder
- 1 teaspoon Chipotle Chili Powder
- 1 teaspoon Onion Powder
- 2 Tablespoons Fresh Cilantro (garnish)
- Place the chicken breast in your slow cooker.
- Season with salt and pepper, and then add the chicken stock, IPA beer, orange juice, peppers, diced tomatoes, Worcestershire sauce, honey, garlic powder, chipotle chili powder and onion powder.
- Cover and cook for 4 hours on high or 6-8 hours on low.
- Shred the chicken with two forks.
- Serve on top of rice or quinoa or in tortillas.
- Garnish with cilantro.
- Enjoy!
