Israeli Chicken by Nancy Cowan
- 2 Chickens- Cut up
- 1 cup White wine
- 1 cup OJ
- 1 2 Onions sliced
- 2 cup each- raisins, apples, prunes
- 1 stalk celery sliced in 1/4 in pieces
- 1 quartered oranges
- Marinate chicken in wine and OJ for 1 hour.
- Slice onions and celery
- Place chicken skin side down over onions and celery, bake at 375 uncovered until brown
- serve with orange slices
- for Rosh Hashana, Nancy adds a little honey and replaced some prunes and raisins with dates.
- Nancy also says she makes it with the wine and OJ without marinating, or cooks it In a skillet and then just browns it in the oven to make it look pretty.
