Spinach Quiche
- 1 1/2 cup fresh spinach, torn with larger stems removed
- 1/2 onion chopped
- 1/4 bell pepper chopped
- 1/2 tbsp olive oil
- 1 1/2 cup Sargento 6 Cheese Italian Blend
- 2 eggs
- 1 cup evaporated milk
- 1/2 tsp pepper
- 1/4 tsp nutmeg
- 1 tsp kosher salt
- 1/4 tsp smoked paprika
- 1 9-inch deep dish prepared pie crust
- preheat oven to 350
- sautee spinach, bell pepper, and onion in olive oil and set aside.
- combine eggs, milk and spices with the exception of the smoked paprika.
- place 1/2 of shredded cheese in the bottom of the pie crust.
- layer the sauteed spinach mixture on top of the cheese
- place the remaining cheese on top of the spinach.
- pour the egg mixture over the top of the layers, and sprinkle the smoked paprika over the top.
- if you have a pie crust shield, place over crust and bake for 40 minutes or until quiche center is firm.
