Mixed Nut Bars

  1. Preheat the oven to 350F (180C).
  2. Cream the butter with the brown sugar.
  3. Add the egg yolk and vanilla, mix well.
  4. Stir in the flour until combined.
  5. Line a 9x13-inch pan with foil.
  6. Press the dough evenly on the bottom of the pan.
  7. Bake for 25 minutes.
  8. Cool to room temperature.
  9. Meanwhile make the topping.
  10. For the nut toppings:
  11. Combine all ingredients in the top of a double boiler.
  12. Melt over simmering water.
  13. Pour the topping over the base.
  14. Sprinkle with nuts and press gently into the topping.
  15. Refrigerate one hour.
  16. Remove the bars from the pan by lifting the foil lining.
  17. Pull foil away from the edges and cut into desired size bars.

  19. Make It Decadent: Use cashews or macadamia nuts (halved) in place of the mixed nuts.
  20. Make It Healthier: Use lightly salted nuts.
