Butter Nut Sugar Cookies Recipe
- 1 c. Firmly packed brown sugar plus 2 tbsp
- 3 ounce Neufchatel cheese
- 1/4 c. Plus 2 tb butter softened
- 2 Tbsp. Skim lowfat milk
- 1/2 tsp Vanilla flavoring
- 1/2 tsp Butter flavoring
- 1/2 tsp Nut flavoring
- 1 x Egg
- 3 c. All-purpose flour
- 1 1/2 tsp Baking pwdr
- 1/2 tsp Salt
- 1/2 c. Sifted powdered sugar
- 1 1/2 tsp Water Food coloring (optional)
- Cream the brown sugar, cheese and softened butter at medium speed with an electric mixer till light and fluffy.
- Add in lowfat milk, flavorings and egg and beat well.
- Combine flour, baking pwdr, and salt and add in to mix, beating well.
- Divide dough into 4 equal portions.
- Working with one portion at a time, roll to 1/8-inch thickness on a well-floured surface; cover and chill remaining dough.
- Cut with 2-inch cookie cutter and place 1 inch apart on cookie sheets.
- Bake at 350F for 10 min.
- Cold on wire racks.
- Repeat with remaining dough.
- Combine powdered sugar, water, and food coloring.
- Spoon icing into a decorating bag fitted with a small, round tip and pipe onto cookies.
- Yield: 8 dozen.
