Homemade Mayonnaise
- 1 egg yolk
- 1/2 cup olive oil
- 2 tsp. lemon juice
- Salt, to taste
- Pepper, to taste
- Separate the egg yolk from the egg white, and toss the egg white.
- Place the egg yolk in a mixing bowl and whisk it up.
- Gradually add olive oil in a steady stream to the egg yolk, whisking vigorously.
- Whisk in the lemon juice, salt and pepper.
