Sweet Potato Casserole
- 5 lb. peeled sweet potatoes
- 3 c. miniature marshmallows
- 1 c. white corn syrup
- 1/2 c. liquid from boiled sweet potatoes or water
- 3 Tbsp. cornstarch
- 1 tsp. cinnamon
- 5 medium cooking apples, peeled and sliced
- 1 tsp. salt
- Peel sweet potatoes and cut into chunks.
- Add about 2 cups of water to a large saucepan with lid and parboil the potatoes until almost done.
- Reserve 1/2 cup of the liquid and cool.
- Layer half the sweet potatoes in a large deep casserole.
- Then add half the apples, spreading evenly.
- Layer 1 1/2 cups of small marshmallows over apple.
- Repeat again with layer of sweet potatoes and apples. (Add rest of the marshmallows on top towards the last 15 minutes of baking time and leave cover off.)
