Grilled Lemon Pepper Chicken
- 4 (8-ounce) bone-in, skin on, split chicken breasts
- 1 Half Stick (1/4 cup) Land O Lakes Butter with Olive Oil & Sea Salt, softened
- 2 tablespoons freshly grated lemon zest
- 1 teaspoon cracked black pepper
- 2 tablespoons fresh lemon juice
- Fresh thyme sprigs, if desired
- Grilled lemon slices, if desired
- Heat gas grill on medium or charcoal grill until coals are ash white.
- Combine 2 tablespoons butter, lemon zest and pepper in bowl; mix well.
- Loosen skin on chicken breasts; spread lemon butter mixture under skin of each breast.
- Place remaining butter into bowl; microwave 5-10 seconds or just until melted.
- Stir in lemon juice.
- Place chicken onto grill, skin-side up.
- Grill 8 minutes.
- Turn chicken; brush top of chicken with 1/3 butter mixture.
- Grill 8 minutes.
- Turn chicken again, brush with 1/3 butter mixture.
- Grill 8 minutes.
- Turn chicken again, brush with remaining butter mixture.
- Grill 8-10 minutes or until internal temperature reaches 165 degrees F and juices run clear when pierced with fork.
