Grilled Lemon Pepper Chicken

  1. Heat gas grill on medium or charcoal grill until coals are ash white.
  2. Combine 2 tablespoons butter, lemon zest and pepper in bowl; mix well.
  3. Loosen skin on chicken breasts; spread lemon butter mixture under skin of each breast.
  4. Place remaining butter into bowl; microwave 5-10 seconds or just until melted.
  5. Stir in lemon juice.
  6. Place chicken onto grill, skin-side up.
  7. Grill 8 minutes.
  8. Turn chicken; brush top of chicken with 1/3 butter mixture.
  9. Grill 8 minutes.
  10. Turn chicken again, brush with 1/3 butter mixture.
  11. Grill 8 minutes.
  12. Turn chicken again, brush with remaining butter mixture.
  13. Grill 8-10 minutes or until internal temperature reaches 165 degrees F and juices run clear when pierced with fork.
