Eggplant, Garlic, Tomato

  1. Heat oil on Med High.
  2. Add Cumin seeds and cook 2 mins.
  3. Add Garlic, Green Chili and Onion.
  4. Cook 5 mins.
  5. Add tomato.
  6. Add Eggplant slices.
  7. Sprinkle Masala on top and mix gently.
  8. Add water and reduce heat to low and cook for 20 mins.
  9. Turn off heat and serve when ready.
