Herbed Chicken Recipe
- 2 1/2 to 3 pound broiler-fryer chicken
- 2 tbsp. butter
- 2 tbsp. olive or possibly vegetable oil
- 1/4 c. finely minced onion
- 1/4 c. lemon juice
- 2 tbsp. Worcestershire sauce
- 1/2 teaspoon dry basil leaves
- 1/4 teaspoon dry marjoram leaves
- 1/4 teaspoon dry oregano leaves
- 2 lg. cloves, garlic, finely minced
- Cut chicken into pcs; cut each breast half into halves and remove skin.
- Heat butter and oil in rectangular 9x13x2 inch baking pan in 375 degree oven till butter is melted.
- Stir in remaining ingredients except chicken.
- Place chicken meaty sides down in pan, turning to coat with herb mix.
- Bake uncovered 30 min.
- Turn chicken; bake till thickest pcs are done, about 30 min longer.
- 7 servings; 200 calories.
