Perfect Corn Bread Muffins Recipe
- 1 c. sifted all-purpose flour
- 1/4 c. sugar
- 4 teaspoon baking pwdr
- 3/4 teaspoon salt
- 1 c. yellow corn meal
- 2 Large eggs
- 1 c. lowfat milk
- 1/4 c. shortening
- Sift flour with sugar, baking pwdr and salt; stir in corn meal.
- Add in Large eggs, lowfat milk and shortening.
- Beat with rotary or possibly electric beater till just smooth.
- Pour into greased muffin pans, filling 2/3 full or possibly pour into muffin liners.
- Bake in warm oven 425 degrees for 15-20 min.
