Roasted Sweet Potatoes and Apples

  1. Preheat oven to 350 degrees.
  2. Coat a 9-by-13-inch baking dish with cooking spray.
  3. In the baking dish, combine the mustard, brown sugar, ginger, olive oil, cider, rosemary and bay leaf.
  4. Add the sweet potatoes and apples and stir well to coat.
  5. Bake for 45 to 50 minutes, or until the apples are golden brown and the sweet potatoes are tender.
