Lentil Casserole

  1. Combine first 9 ingredients in an oven proof casserole with a lid
  2. Cover and Bake in 350 F oven for an hour or until lentils are tender.
  3. Check liquid from time to time and add a little water if necessary.
  4. In a separate pan saute onions in butter and oil until deeply carmelized.
  5. Add Balsamic vinegar to onions.
  6. Stir together.
  7. When Lentils are tender add onion mixture, and smoked meat and heat for 10 minute Adjust seasoning to your taste.
