Buttermilk Oatmeal Berry Muffins Recipe
- 1 c. plus 2 Tbsp. rolled oats
- 1 c. buttermilk
- 1 Tbsp. vanilla
- 1 c. flour
- 1 Tbsp. baking pwdr
- 1 tsp salt
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/2 tsp nutmeg
- 1/4 c. walnuts, finely minced, optional
- 1 x egg
- 3/4 c. light brown sugar, firmly packed
- 1/4 c. unsalted butter, softened
- 1 1/3 c. berries
- Generously butter 18 large muffin tins.
- Place on rack in center of oven.
- Preheat oven to 400 degrees.
- Blend oats, buttermilk and vanilla in a medium bowl and set aside.
- Combine egg and brown sugar in large bowl; blend well.
- Add in butter and beat for 1 minute.
- Add in buttermilk mix and blend in well.
- Add in dry ingredients and blend till flour is just incorporated; don't overmix.
- Mix in berries.
- Fill muffin tins half full; bake till muffins are lightly browned, about 15 to 20 min.
- Turn out onto rack to cold.
- Makes18 muffins.
