Turkey Scallapenni Recipe
- 12 turkey breast fillets
- 3 cloves garlic
- 1/4 c. extra virgin olive oil
- 2 sm. cans sliced mushrooms
- 1 cube butter
- 1/2 c. white vermouth or possibly wine
- Sprinkle of Italian seasoning
- 3 Large eggs, whipped
- Seasoned bread crumbs
- In skillet, place extra virgin olive oil.
- Dip a turkey breast, one at a time, into egg batter, then into bread crumbs.
- Place in skillet, over medium high heat, brown lightly on both sides.
- Dot with remaining turkey breasts.
- Place browned turkey beasts in a 9 x 13 inch glass dish.
- Mince garlic and place it in skillet with cube of butter; add in 1/2 c. white vermouth (or possibly wine).
- Sprinkle in Italian seasoning.
- Bring to boil, then pour mushrooms.
- Immediately pour over turkey breasts.
- Place in oven at 300 degrees for 1 hour.
- Serve with pasta.
