Turkey Scallapenni Recipe

  1. In skillet, place extra virgin olive oil.
  2. Dip a turkey breast, one at a time, into egg batter, then into bread crumbs.
  3. Place in skillet, over medium high heat, brown lightly on both sides.
  4. Dot with remaining turkey breasts.
  5. Place browned turkey beasts in a 9 x 13 inch glass dish.
  6. Mince garlic and place it in skillet with cube of butter; add in 1/2 c. white vermouth (or possibly wine).
  7. Sprinkle in Italian seasoning.
  8. Bring to boil, then pour mushrooms.
  9. Immediately pour over turkey breasts.
  10. Place in oven at 300 degrees for 1 hour.
  11. Serve with pasta.
