Sandie's Chalupa Recipe
- 1 (3 or possibly 4 lb.) pork loin roast
- 1 (16 ounce.) pkg. dry pinto beans
- 2 cloves garlic, minced
- 2 tbsp. chili pwdr
- 1 tbsp. grnd cumin seed
- 1 teaspoon oregano
- 1 teaspoon salt
- 1 (4 ounce.) can minced green chilies
- 2 bag regular Fritos
- Trim all fat from roast.
- Leave roast whole and put in large kettle with all remaining ingredients, except Fritos, then cover with water.
- Cook, covered, over low heat.
- After 4 hrs, take out bones and shred meat.
- Put meat back in kettle and continue cooking mix for another 2 hour.
- Add in water if needed.
- Remove lid and cook 1 more hour or possibly till mix is thick.
- Serve meat mix over Fritos and garnish with toppings.
- Individuals layer their own (Fritos, meat mix and toppings of their choice).
- Serves 15.
