Bean with Bacon Soup

  1. Cook bacon, crumble and put into your crock pot.
  2. Saute chopped onions in bacon fat until translucent.
  3. Use a slotted spoon to remove onions from the cooking pan.
  4. Transfer them to your crockpot.
  5. (You should have a couple of tablespoons of bacon fat sticking to the onions; thats a good thing!)
  6. Add the beans, the chicken stock and the water.
  7. Set crock pot on low and cook for about 4 hours.
  8. During the last hour of cooking, add the sliced carrots and continue cooking until carrots and beans are tender.
  9. Season to taste.
  10. Serve.
