Bean with Bacon Soup
- 4 slices Thick Cut Bacon
- 1 whole Yellow Onion, Chopped
- 2 cups Dried Bean Medley Such As Bob's Red Mill 13 Bean Soup Mix
- 1 quart Chicken Stock
- 2 cups Water
- 1 cup Sliced Carrots
- Salt And Pepper
- Cook bacon, crumble and put into your crock pot.
- Saute chopped onions in bacon fat until translucent.
- Use a slotted spoon to remove onions from the cooking pan.
- Transfer them to your crockpot.
- (You should have a couple of tablespoons of bacon fat sticking to the onions; thats a good thing!)
- Add the beans, the chicken stock and the water.
- Set crock pot on low and cook for about 4 hours.
- During the last hour of cooking, add the sliced carrots and continue cooking until carrots and beans are tender.
- Season to taste.
- Serve.
