Creole Chicken & Sausage Gumbo
- 2 medium onions, diced
- 1 green pepper, diced
- 1 red pepper, diced
- 1 jalapeno, diced
- 1 tablespoon garlic, crushed
- 14 cup butter
- 4 cups water
- 1 tablespoon instant beef bouillon (or au jus mix)
- 1 tablespoon chicken base (or bouillon cube)
- 1 teaspoon salt
- 14 teaspoon pepper
- 1 bay leaf
- 1 (10 ounce) package frozen okra
- 1 (16 ounce) can tomato paste
- 2 -3 lbs cooked chicken
- 1 lb sausage (andouille is best)
- 1 (10 ounce) package frozen corn
- hot pepper sauce (like tabasco)
- In a large pot, cook and stir onion, peppers and garlic in butter over low heat until onions are tender (about 5 minutes).
- Add remaining ingredients.
- Heat to boiling, reduce heat.
- Simmer 45 minutes, stirring occasionally ( for more flavor or spice, add more pepper sauce or chili powder).
- Serve over bed of rice with lemon as garnish.
