Easy Chili And Old-Fashioned Corn Bread(Serves 4)
- nonstick cooking spray
- 1 c. yellow cornmeal
- 3/4 c. sifted all-purpose flour
- 1 Tbsp. baking powder
- 1/2 tsp. sugar
- 1/4 tsp. salt
- 1/2 Tbsp. unsalted margarine, melted
- 1 c. skim milk
- 1 large egg
- 4 Hormel Micro Cup meals (chili with beans)
- Heat oven to 400u0b0.
- Lightly coat an 8 x 8 x 2-inch baking pan with cooking spray; set aside.
- In medium bowl, combine cornmeal, flour, baking powder, sugar and salt; set aside.
- Pour margarine into small bowl; whisk together with milk and egg.
- Add to cornmeal mixture; stir just until dry ingredients are moistened.
- Pour batter into pan; bake 20 minutes or until bread is golden and top springs back when touched.
- Cut into 8 squares.
- Prepare chili according to package directions.
- Remove to serving plates and serve with corn bread.
