Apricot Praline Muffins Recipe

  1. Preheat oven to 425 degrees.
  2. Grease a 12-c. muffin pan.

  4. Fit the steel knife blade into the work bowl.
  5. Process the pecans till minced into 1/8-inch pcs.
  6. Distribute minced pecans proportionately in muffin c..

  10. With the steel knife blade still attached, process apricots till minced into 1/4-inch pcs.
  11. Add in brown sugar, cinnamon, biscuit mix and lowfat milk.
  12. Process till batter is well mixed, 10-15 seconds, stopping machine once to scrape down sides of bowl with rubber spatula.
  13. Pcs of apricots should still be visible.

  15. Drop by spoonfuls into muffin c.. Bake till a wooden pick inserted in center of a muffin comes out clean, about 15 min.
  16. Don't push pick all the way to bottom.
  17. Remove from oven and invert muffin pan on a serving plate.
  18. Don't remove pan; let stand 10 min so pecans and margarine will drop down onto muffins.
  19. Yield: 12 muffins.
