Copper Country Quiche

  1. In food processor with steel blade or in large mixer bowl, cut butter and cream cheese into 1 cup flour until mixture forms a smooth dough.
  2. Roll out to fit a 9-inch pie or quiche pan.
  3. Freeze 10 minutes.
  4. In large saucepan, place spinach.
  5. Cook over medium heat a few minutes until wilted.
  6. Drain and chop.
  7. Drain well on paper towel.
  8. In a large bowl, combine spinach with the 2 tablespoons flour.
  9. Mix in remaining ingredients.
  10. Pour mixture into prepared pastry shell.
  11. Bake at 350u0b0 for 50 to 60 minutes until set in the center.
  12. Makes 1 (9-inch) quiche.
