Copper Country Quiche
- 1/2 c. (1 stick) butter
- 1 (3 oz.) pkg. cream cheese
- 1 c. all-purpose flour
- 1 lb. fresh spinach, washed and trimmed
- 3 eggs
- 1/2 c. mayonnaise
- 1/2 c. sour cream
- 8 slices bacon, cooked and crumbled
- 1 c. fresh mushrooms, sliced
- In food processor with steel blade or in large mixer bowl, cut butter and cream cheese into 1 cup flour until mixture forms a smooth dough.
- Roll out to fit a 9-inch pie or quiche pan.
- Freeze 10 minutes.
- In large saucepan, place spinach.
- Cook over medium heat a few minutes until wilted.
- Drain and chop.
- Drain well on paper towel.
- In a large bowl, combine spinach with the 2 tablespoons flour.
- Mix in remaining ingredients.
- Pour mixture into prepared pastry shell.
- Bake at 350u0b0 for 50 to 60 minutes until set in the center.
- Makes 1 (9-inch) quiche.
