Dipped Peanut Butter Sandwich Cookies

• 1/2 cup peanut butter
• 4 ounces crackers
• 1 cup white chocolate chips
• 1 tablespoon vegetable shortening

1. Spread peanut butter on half of the crackers; top with remaining crackers teaspoon make sandwiches.
2. Refrigerate.
3. In a double boiler over simmering water melt choice of chocolate chips and shortening, stirring until smooth.
4. Dip sandwiches and place on waxed paper until chocolate hardens.
