Beetroot And Orange Salad Recipe
- 500 gm beetroot, baby
- 2 x oranges
- 1 Tbsp. parsley, minced
- 1/4 c. extra virgin olive oil
- 1 Tbsp. white wine vinegar
- 2 Tbsp. lemon juice
- 1 tsp mustard, whole grain
- 1 tsp garlic, crushed
- 1/2 tsp sugar (caster) salt, pepper
- Dressing:Put all ingredients in a screw topped jar and shake well to blend before using.
- Drain beetroot and place in a salad bowl.
- Finely grate the orange rind and mix with the dressing.
- Peel the pith from the oranges and break into segments.
- Add in to the beetroot.
- Pour the dressing over and toss thoroughly.
- Sprinkle with minced parsley to serve.
- Serves 4.
- Great for BBQ and outdoor parties.
