red wine braised short ribs

  1. adjust oven rack to lower middle position and preheat oven to 450
  2. coat ribs in oil and sprinkle with salt and pepper
  3. heat Dutch oven pot on medium-high heat
  4. cook ribs, turning only once, till browned on both sides.
  5. about 5-6 min
  6. drain all but 1 TB fat from pan and saute onions about 5 min
  7. add garlic and thyme, saute about 1 min
  8. stir in flour, then wine, followed by chicken broth and tomatoes
  9. return ribs to pot and bring to a simmer
  10. place foil over pot and cover with a lid.
  11. place pot in oven for about 1 1/2 hrs
