Artichoke Melts
- 1 cup breadcrumbs
- 1 (14 ounce) can water-packed artichoke hearts, drained and chopped
- 34 cup parmesan cheese, fresh, grated
- 14 cup mayonnaise
- 1 garlic clove, pressed
- fresh parsley, snipped (optional)
- Preheat oven to 350.
- Chop artichoke hearts.
- Grate cheese.
- In same bowl, combine artichokes 1/2 cup of the cheese, mayonnaise and garlic pressed with a garlic press; mix well.
- .Using a small scoop, place one scoop artichoke mixture into bead crumbs roll until coated place on parchment lined baking sheet,sprinkle with remaining cheese.
- If desired, top with chopped parsley.
- Bake 25-30 minutes or until they are golden brown Remove to cooling rack.
- Serve.
