Barbecue Bacon-Wrapped Chicken

  1. Heat oven to 400 degrees F.
  2. Place bacon, in batches if necessary, in single layer on paper towel-covered microwaveable plate; cover with additional paper towel.
  3. Microwave on HIGH 2 min.
  4. or until almost done.
  5. (Do not cook until crisp.)
  6. Cool slightly.
  7. Wrap bacon around chicken breasts; secure with wooden toothpicks.
  8. Place on rimmed baking sheet; brush with barbecue sauce.
  9. Bake 25 min.
  10. or until chicken is done (165 degrees F) and bacon is crisp.
  11. Meanwhile, bring broth to boil in medium saucepan.
  12. Stir in rice; return to boil.
  13. Cover; simmer on low heat 5 min.
  14. Remove from heat.
  15. Let stand, covered, 5 min.
  16. Fluff rice with fork.
  17. Serve with chicken.
