Pumpkin Spice Filled Whoppie Pies

  1. Preheat oven to 375.
  2. Line baking sheets with parchment paper
  3. In a bowl whisk flour with baking soda, baking powder and salt, set aside
  4. In a large bowl beat butter and sugar until light and fluffy
  5. Add egg and beat in, stir in cocoa powder
  6. Beat in buttermilk and vanilla
  7. Stir in flour mixture until well combined
  8. Drop batter by tablespoonfuls 2 inches apart on prepared pans.
  9. Press sprinkles on surface of batter.
  10. Bake 8 to 10 minutes until set.
  11. Let sit on pan 1 minute then transfer to a wire rack to cool completely
  12. MAKE PUMPKIN SPICE FILLING
  13. In a large bowl beat cream cheese and butter until well combined, add sugar slowly beating until creamy, beat in pumpkin pie spce, cinnamon and vanilla
  14. Add drops of orange food color to get the color you want, chill filling about 30 minutes to firm up before using
  15. ASSEMBLE WHOPPIE PIES
  16. Place a cake bottom side up on work surfave
  17. Spread some filling on cake
  18. Ytop with another cake , top up
