Welsh Currant Cookies
- 3 c. sifted flour
- 1 c. sugar
- 1 1/2 tsp. baking powder
- 1 1/4 tsp. salt
- 1/2 tsp. baking soda
- 2 tsp. nutmeg
- 1 c. shortening
- 1 c. currants
- 2 eggs
- 6 Tbsp. milk
- 1 c. butter or margarine
- 1 c. dark molasses
- 1 c. packed brown sugar
- 4 c. all-purpose flour
- 4 tsp. ginger
- Heat butter and molasses together until the butter has melted. Blend in the brown sugar.
- Mix in the flour and ginger thoroughly.
- While mixture is still hot, roll out dough, a small amount at a time, on a lightly floured board.
- It should be very thin.
- Cut with cookie cutters, hearts, diamonds, etc.
- Put on a greased cookie sheet.
- Bake in slow oven, 325u0b0, for 15 minutes or until lightly browned.
- When rolled thin makes about 12 dozen.
