Creamy Carrot Casserole

  1. In a saucepan, cook carrots just until crisp-tender; drain, reserving 1/4 cup cooking liquid.
  2. Place carrots in a 1 1/2 quart baking dish.
  3. Combine mayonnaise, onion, horseradish and reserved cooking liquid.
  4. Spread evenly over carrots.
  5. Sprinkle with cheese; top with bread crumbs.
  6. Bake, uncovered, at 350F (180C) for 30 minutes.
