Turkey Meat Loaf Surprise

  1. Grease a 10-inch round ovenproof baking dish; add all the filling ingredients except the butter in a mixing bowl and stir until combined.
  2. Spread turkey mixture into the prepared dish; refrigerate until ready to use.
  3. Make the mashed potatoes: add the potatoes to a 4-quart pan with water to cover; add in 1 teaspoon salt and bring water to a boil.
  4. Boil gently for 15-20 minutes, until the potatoes are tender when pierced with a sharp knife.
  5. Drain the potatoes in a colander and return them to the pan; shake the pan over the heat to dry the potatoes.
  6. Add in the remaining teaspoon salt, the bacon, milk, sour cream, and pepper; mash potatoes, and taste to correct the seasoning.
  7. Cool the potatoes in the refrigerator until ready to bake.
  8. When ready to proceed, preheat oven to 375; spread potatoes over the meat loaf, dot the top with the butter, and place in preheated oven.
  9. Bake for 45 minutes to 1 hour until the potatoes are golden brown.
  10. Cut into wedges and serve.
