Blueberry-Banana Bread
- 1 c. fresh blueberries
- 1 3/4 c. all-purpose flour, divided
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 1/4 tsp. ground nutmeg
- 1/4 c. unsalted margarine, softened
- 1/4 c. plus 2 Tbsp. sugar
- 2 eggs
- 1 c. mashed, ripe bananas
- vegetable cooking spray
- Toss blueberries with 2 tablespoons flour; set aside.
- Combine remaining flour, baking powder, soda, salt and nutmeg in a small bowl.
- Cream margarine in a large bowl; gradually add sugar, beating at medium speed of electric mixer.
- Add eggs, one at a time, beating well after each addition.
- Add flour mixture alternately with mashed bananas, beginning and ending with flour mixture.
- Mix just until dry ingredients are moistened.
- Gently fold in reserved blueberries.
