Without Butter Crispy Cookies Made with Roasted Soy Flour
- 100 grams Flour
- 30 grams Kinako
- 1/2 Beaten egg
- 40 grams Sugar
- 40 grams Oil
- 2 pinch Salt
- Mix the "A" ingredients well.
- Add the beaten egg in, and mix some more.
- Add kinako (roasted soy flour) and flour to Step 1, and mix until the mixture becomes as shown in the picture.
- Then form the dough into a clump with your hands.
- Cover with plastic wrap, and shape into a roll.
- Let it sit in the freezer for about 15 minutes.
- Slice into 5 mm with a knife, and bake in the oven for 18 minutes at 170C / 340F.
- When you're using cookie cutters, you don't need to chill the dough in the freezer.
- If you double the amount, you can use 1 egg, so it's easier.
- I always double the amount otherwise my family eats them up too quickly.
