Mrs. Maggie'S Fruit Cake
- 1 large box mixed fruit
- 1 small box cherries, save for top of cake
- 1 box candied dates
- 1 box candied figs
- 1 box seedless black raisins
- 1 c. English walnuts
- 1 c. pecans + some halves (for top)
- 1 1/2 c. flour
- 1 tsp. cinnamon
- 1 tsp. allspice
- 10 eggs
- 1 lb. margarine
- 1 1/2 c. molasses
- Mix nuts, raisins, fruit, spice and flour.
- In another bowl, mix eggs, margarine and molasses.
- Combine well the first 2 mixes. Grease a round (8-inch) deep pan.
- Line bottom and sides of pan with wax paper and let paper hang over edges of pan.
- Spray with Pam spray.
- Pour mix into pan.
- Trim top of cake with cherries and pecan halves.
- Completely cover top of cake pan with wax paper and tie down with string.
- Place on rack in large canner.
- Fill canner with hot water to reach 1/2 way up pan.
- Start to boil and turn down.
- Replace water to keep halfway in pan.
- Cook 2 1/2 hours. Remove and place in oven at 300u0b0 until paper is dry.
- Cool overnight.
