Minted Blood Orange Dessert
- 2 blood oranges, rind removed and cut to 1/4" thickness
- 2 graham crackers, finely crushed
- 2 tsp sugar
- 1 tbsp butter, softened
- 1 *Cream*
- 1 cup heavy cream or whipping cream
- 4 mint leaves, finely chopped
- 1 tsp cardamom
- 3 tsp orange juice
- 2 tsp sugar
- 1 tsp vanilla extract
- 1 mint leaves to garnish
- Slice blood oranges 1/4" thick after rind has been removed or as thick as you like.
- Add all cream ingredients to a mixer bowl (I used my stand mixer) and mix at medium high speed until cream forms stiff peaks, usually anywhere from 5 to 7 minutes.
- You could also use a hand mixer/beater for this as well if you dont have a stand mixer.
- Just beat the cream ingredients on high speed until stiff peaks form.
- Combine graham cracker crumbs, butter and sugar.
- Spoon into the bottom of a bowl or dessert dish.
- Top graham cracker crumbs with whipped cream.
- Lay blood oranges on top of whipped cream and garnish with mint leaves.
- Enjoy!
