Simple Spiced Nuts

  1. Line a baking sheet with parchment paper.
  2. In a large pan over low heat add the olive oil.
  3. When it is heated add the nuts, salt, and paprika and toast until golden, about 8-10 minutes.
  4. Then add the sugar and cook, stirring constantly, for another 3 minutes.
  5. Transfer the nuts to the sheet pan, mix in the sunflower seeds and spread in a single layer to cool.
  6. Sprinkle the nut mixture with the mint.
  7. Transfer the nuts to a bowl.
  8. Taste and add more salt if needed.
  9. Serve and enjoy.
