Apple Salad Cups
- 6 medium red apples
- lemon juice
- 3 medium firm ripe peaches
- 12 cup thinly sliced celery
- 12 cup red grapes, seeded, halved
- 12 cup miniature marshmallow
- 14 cup broken walnuts
- 14 cup mayonnaise or 14 cup salad dressing
- 14 cup sour cream
- 1 teaspoon sugar
- 14 teaspoon salt
- curly endive lettuce (or chickory)
- Cut a 1/4" thick slice from stem end of each apple; set aside.
- Core apples not quite to bottom, then hollow out insides, leaving shells 1/4" think.
- Make deep even sawtooth cuts into apple shells all the way around;lift out cut sections.
- Brush cut surfaces of apples lightly with lemon juice to prevent darkening.
- Dice enough of the unpared apple cut-outs to make 4 cups; place in a medium-size bowl.
- (Use all remaining apple pieces to make applesauce).
- Peel one of the peaches, pit, and dice; add to diced apples with celery, grapes, marshmallows, and walnuts.
- Blend mayonnaise or salad dressing, sour cream, 1 teaspoons lemon juice, sugar, and salt in a small bowl.
- Pour over apple mixture; toss lightly to mix.
- Place each apple cup on a chickory-lined salad plate; spoon salad mixture into centers.
- Peel remaining two peaches; pit and slice.
- Arrange slices around base of each salad.
