Gardenia Easter Pie

  1. Preheat oven to 375F (190C).
  2. Roll out half of dough and line 9 inch buttered pie pan.
  3. Saute peppers and ham in oil 3 minutes, season with pepper.
  4. Wisk 2 eggs and ricotta in large bowl.
  5. Spread mixture in pastry shell.
  6. Pat spinach dry, sprinkle on top.
  7. Sprinkle saute mix over spinach and top with mozzarella.
  8. Add basil.
  9. Roll out remaining dough and cover pie.
  10. Trim edges.
  11. Cut 4 vents and brush top with beaten egg.
  12. Bake 50 to 60 minutes, or until golden brown.
  13. Set 20 minutes and serve.
