Marinated Shrimp And Vegetables
- 1 lb. medium raw shrimp, deveined and cooked
- 1 c. fresh cauliflowerets
- 4 oz. small whole fresh mushrooms
- 1 c. sliced zucchini
- 1 large red or green pepper, cut into squares
- 3/4 c. ReaLemon lemon juice from concentrate
- 1 Tbsp. chopped green onion
- 2 tsp. sugar
- 1 tsp. salt
- 1/4 to 1/2 tsp. dill weed
- 5 drops hot pepper sauce
- 3/4 c. vegetable oil
- Place shrimp and vegetables in shallow dish.
- In a small bowl, combine remaining ingredients, except oil.
- Mix well.
- Add oil; mix well.
- Pour over shrimp and vegetables.
- Cover; refrigerate 6 hours or overnight, stirring occasionally. Refrigerate leftovers. Makes about 5 cups.
