Banana Streusel Muffins
- 1-1/4 cups flour
- 1 Tbsp. CALUMET Baking Powder
- 1/8 tsp. salt
- 1 egg
- 1/2 cup fat-free milk
- 1/3 cup firmly packed brown sugar
- 3 Tbsp. oil
- 1-1/2 cups banana nut whole grain cereal flakes
- 2 small bananas, finely chopped (about 1 cup)
- 1/2 cup banana nut whole grain cereal flakes, lightly crushed
- 1 Tbsp. brown sugar
- 1/2 tsp. ground cinnamon
- 1 tsp. oil
- Preheat oven to 400F.
- Mix flour, baking powder and salt in large bowl; set aside.
- Beat egg, milk, 1/3 cup brown sugar and 3 Tbsp.
- oil with wire whisk until well blended.
- Add to flour mixture; stir just until moistened.
- (Batter will be lumpy.)
- Stir in 1-1/2 cups cereal and bananas.
- Spoon batter into 12 greased or paper-lined medium muffin cups, filling each cup two-thirds full.
- Mix 1/2 cup cereal, 1 Tbsp.
- brown sugar and cinnamon in small bowl.
- Drizzle with 1 tsp.
- oil; stir until crumbly.
- Sprinkle evenly over batter.
- Bake 20 min.
- or until lightly browned.
- Serve warm.
