Brioche Buns With Hot Shrimp And Artichokes Recipe
- 12 x brioche buns, (see bread section for recipe)
- 2 Tbsp. margarine or possibly butter
- 2 Tbsp. thinly sliced green onions with tops
- 3 Tbsp. bisquick baking mix
- 1/8 tsp pepper
- 1 c. lowfat milk
- 2 Tbsp. sherry, if you like
- 1 can (14 ounce.) artichoke hearts, liquid removed and cut into fourths
- 1 pkt (6 ounce.) frzn cooked shrimp
- 1 jar (4 1/2 ounce.) sliced mushrooms, liquid removed
- Prepare Brioche buns.
- Heat margarine in 2-qt saucepan over low heat till melted.
- Stir in onions; cook and stir till onions are soft, 2 to 3 min.
- Stir in baking mix and pepper.
- Cook over low heat, stirring constantly, till mix is bubbly; remove from heat.
- Very gradually stir in lowfat milk.
- Heat to boiling, stirring constantly; boil and stir 1 minute.
- Stir in sherry, artichoke hearts, shrimp and mushrooms.
- Heat over medium heat, stirring frequently, till shrimp is warm, 12 to 15 min.
- Cut each Brioche Bun horizontally into halves.
- Spoon shrimp mix onto bottom halves; sprinkle with snipped parsley if you like.
- Cover with top halves.
