Mocha Fudge Pie
- 1/3 c. hot water
- 4 tsp. instant coffee granules, divided
- 1/2 (20.5 oz.) box light fudge brownie mix (about 2 c.)
- 2 tsp. vanilla extract, divided
- 2 large egg whites
- cooking spray
- 3/4 c. (1%) low-fat milk
- 3 Tbsp. kahlua or other coffee flavored liqueur, divided
- 1 (3.9 oz.) pkg. chocolate-flavored instant pudding mix OR 1 (1.4 oz.) pkg. sugar-free chocolate instant pudding mix
- 3 c. frozen reduced-calorie whipped topping, thawed and divided
- Preheat oven to 325u0b0. Combine hot water and 2 teaspoons granules in a bowl; stir well. Add 2 cups brownie mix, 1 teaspoon vanilla and egg whites; stir until well-blended. Pour mixture into a 9-inch pie plate coated with cooking spray. Bake at 325u0b0 for 22 minutes (brownie will be fudgy when tested with a wooden pick). Let cool completely on a wire rack.
