Avocado Omelet
- 6 eggs
- 6 tablespoons milk
- 12 teaspoon salt
- 1 dash pepper
- 6 tablespoons butter
- 1 small onion, diced
- 2 large tomatoes, diced
- 14 teaspoon salt
- vegetarian bacon bits (Optional & as much as you like)
- 18 teaspoon pepper
- 14 teaspoon chili powder
- 2 avocados
- Omelet:.
- Prepare as a regular omelet.
- Add avocado slices inside.
- Sauce:.
- In a medium skillet cook onions, tomatoes, salt, papper, chili pepper in butter.
- Simmer several minutes under onion is tender.
- Remove from heat.
- Peel avocades and reserve some slices for garnish.
- Mash remaining avocado and add to sauce.
- Mix well.
- Put in gravy boat so guests can pour it on.
