Steak with Orzo and Stroganoff Sauce

  1. Heat broiler to high.
  2. Cook the orzo according to package directions.
  3. Drain, return to the pot and toss with 1 Tbsp oil and half the parsley.
  4. Line a rimmed baking sheet with nonstick foil.
  5. Season the steak with the paprika and 1/2 teaspoon each salt and pepper and broil to desired doneness, 5 to 6 minutes per side for medium.
  6. Transfer to a cutting board and let rest for 5 minutes before thinly slicing.
  7. While the steak is cooking, heat 1 tablespoon oil in a large skillet over medium heat.
  8. Add the onion and cook, covered, stirring occasionally, for 4 minutes.
  9. Increase heat to medium-high.
  10. Add the mushrooms, remaining tablespoon oil and 1/2 teaspoon each salt and pepper and cook, tossing occasionally, until golden brown and tender, 6 to 7 minutes.
  11. Add the wine and cook for 1 minute.
  12. Stir in the sour cream and mustard just to combine; remove from heat and stir in the remaining parsley.
  13. Serve the steak with the orzo and spoon the mushroom sauce over the top.
