Dried Apple Cake
- 1 c. shortening
- 2 c. sugar
- 2 eggs
- 4 c. flour (plain)
- 1 tsp. baking soda
- 1 tsp. salt
- 4 tsp. baking powder
- 2 tsp. nutmeg
- 1/2 c. buttermilk
- 1 qt. dried apples, stewed
- 1/2 c. sugar
- 1 tsp. vanilla
- Cream together shortening and sugar (adding sugar slowly) and beat until smooth.
- Add 1 egg at a time to mixture and beat until fluffy.
- Sift together flour, baking soda, salt, baking powder and nutmeg and add to creamed mixture together with buttermilk; mix well.
- Divide into 8 equal portions; bake 2 to 3 portions at a time in greased 8 to 9-inch cake pans for 12 minutes at 325u0b0. Stack cake layers while they are hot; let cool.
- Stew apples, being careful not to get them too dry; remove from heat and add 1/2 cup sugar and 1 teaspoon vanilla; mash apples thoroughly to the consistency of creamed potatoes.
- Let cool before icing cake.
