Lemon Meringue Pie

  1. Base: Combine 180g plain crushed biscuits with 90g melted butter.
  2. Press mixture into a 23cm greased pie plate.
  3. Chill while making filling.
  4. Filling: Combine one 400g can condensed milk.
  5. 1/2 cup fresh lemon juice, rind from a lemon, and 3 lightly beaten egg yolks.
  6. spoon mixture into crumb crust.
  7. Topping: Beat 3 egg whites until stiff, gradually add 1/2 cup castor sugar.
  8. Spoon or pipe meringue onto filling and bake in preheated (180 degree C) oven until golden, about 15 minutes.
