Cranberry Heart Muffins
- 1 cup flour
- 1/3 cup firmly packed brown sugar
- 2 tsp. CALUMET Baking Powder
- 1/2 tsp. ground cinnamon
- 1/2 tsp. salt
- 2-1/2 cups whole grain cereal flakes with cranberries and almonds
- 1 cup milk
- 1 egg
- 1/3 cup oil
- Preheat oven to 400F.
- Mix flour, sugar, baking powder, cinnamon and salt in large bowl; set aside.
- Mix cereal and milk in another bowl; let stand 3 minutes.
- Stir in egg and oil; mix well.
- Add to flour mixture; stir just until moistened.
- (Batter will be lumpy.)
- Spoon batter into paper-lined medium muffin pan, filling each cup 2/3 full.
- Roll 12 (4-inch square) pieces of foil into balls.
- Tuck 1 between paper liner and side of each muffin cup to resemble heart shape.
- Bake 20 minutes or until golden brown.
- Serve warm.
