Orange mint Glazed Lamb Loins Fresh Summer Veggies and Creamy Lemon Vinnegrette
- 1 1/2 cup orange juice
- 2 tbsp white wine
- 1 tbsp honey
- 1/2 cup sugar
- 1 1/2 tbsp Fruit pectin or thickener
- 2 tbsp dry or fresh mint chopped fine
- 1 each dry arbol chilli broken up in small pcs
- 2 tbsp mayonnaise
- 1 each juiced lemon
- 1 tbsp dry white wine
- 1 tsp white vinegar
- 3 each lamb loins
- 1 packages prepared polenta
- 1 each mint sprig
- Put all ingredients in small sauce pot fpr orange glaze and bring to simmer.
- Watch close it can boil over!
- Once simmered turn to very low heat for 15min, then remove to cool and thicken.
- Prepare and mix ingredients for creamy lemon vinegrette.
- Set aside to drizzle on summer veggies
- Steam your veggies your choice.
- Pan fry polenta slices.
- Grill or pan fry lamb loins.
- Once lamb cook brush orange mint glaze on while still hot.
- Drizzle Creamy lemon vinegrette over veggies on plate lay polenta down then glazed loins touch off with sprig of mint.
