The Bel-Aire Diner's Paella
- 14 cup olive oil
- 1 cup uncooked rice
- 1 cup chicken broth
- 2 ounces white wine
- salt or pepper
- 4 shrimp, deveined
- 4 scallops
- 4 clams, scrubbed
- 4 mussels, scrubbed
- 2 small lobster tails
- 1 chicken breast (cut in cubes)
- parsley (to garnish)
- 1 teaspoon garlic
- 12 cup cooked peas
- 4 pieces calamari
- Make rice according to recipe on box (but replace one cup of water with chicken broth).
- When rice is cooked, add peas.
- Saute garlic in hot oil, then add chicken.
- Saute for several minutes, then add the shellfish.
- Add wine and salt and pepper to taste.
- Toss with cooked rice and top with with parsley.
