Lo Mein Salad
- 1 lb. thin spaghetti, cooked al dente
- 4 cloves coarsely chopped garlic
- 3 oz. Chinese sesame oil
- 4 oz. soy sauce
- 8 oz. mild taco sauce
- 1/2 c. honey
- 3 1/2 Tbsp. red wine vinegar
- 1/2 c. toasted sesame seed *
- 1/2 bunch broccoli flowerets
- 8 oz. sliced mushrooms
- 3 oz. snow peas
- Bring all liquid ingredients and garlic to a boil.
- Toss with warm rinsed spaghetti.
- Fold in sesame seed.
- Chill 24 hours. Before serving, add scallions, lightly steamed broccoli, mushrooms and snow peas.
- (You can lightly saute these in corn oil if you prefer.)
- You can substitute or add ingredients such as carrots and asparagus.
- You can turn this into a main dish by adding ground beef, pork, chicken or shrimp.
